Easy Dijon Roasted Potatoes

EASY DIJON ROASTED POTATOES

1 1/2 lbs. small red potatoes, cut in half
1/3 C. Olive oil
1/4 C. Dijon Mustard
2 tsp. dried rosemary, thyme, or oregano leaves
Salt & Pepper to taste

Place potatoes in large baking dish. Mix remaining ingredients in a small bowl. Drizzle over potatoes. Toss to coat. Bake @ 425* for 30 to 40 minutes stirring often until potatoes are tender.

Makes 6 Servings
